Totally depends on your level and skills .... if you're a beginner: first study exisiting models and get a good idea how legs, heads, .... (in case you want to design animals) are formed ... With the trial-and-error method you either start from existing bases or fold 'wild' .... have an idea in your head and try to give that idea shape with your hands!
